The Autumn Equinox is officially here this week! Of course, we have our classic Bay Area September where it is hot as balls. It is a little difficult to "get into the spirit" with this shiz. And this crazy weather always happens when you least expect it. Last week it was foggy and chilly in the morning, I was wearing a scarf, even took my boots out, and BAM. Sunday it was like 98 degrees. Um, what. Can we get some balance here, please?
Well weather ready or not, I am looking forward to fall. This time of year really makes me desperately miss Colorado, the super crispy air, the evening light, and all the beautiful the changing leaves. (My dad always used to say, "those leave are dead, why do you think they are pretty?" Ugh...DAD.) I love nothing more than snuggling on the couch on a weekend morning with my blanket, a book, and a hot cup of coffee. It is the best! And though I'm not in Colorado, I'm here in sunny California. I'm happy to be here and making the very most out of my favorite season. It is a little hot for a blanket this week, but I am still doing the coffee thing hard.
Ok, so we've got coffee, blankets, books, changing leaves...but fall also means Halloweeeeen! In just a few weeks Chris and I will be busting out the scary movies for our annual October-movie-a-thon! Seriously, I look forward to it every year. I was actually considering canceling a work trip to ensure I wouldn't miss too many movie days. That's stupid, I know, but I am way more introvert in my mature years and movies at home seems so much better than smoozing with strangers. Can I do that? I don't even know if I can cancel the trip. But serious thoughts are going into how I can maneuver it. I digress...
But of course, nothing else screams the fall season like pumpkin everything! I'm one of those "basic" ladies who adore all the pumpkin stuff. I don't care what you think of me. It is who I am. Don't hate on it. Trust me when I tell you making pumpkin everything at home is so much better than store stuff. Expect maybe Pumpkin Joe Joe's from Treader Joe's - can't beat those guys. Any way, I've experimenting on pumpkin creamer these past few weeks and I was so excited to finally share it!
This recipe is better than basic. It is the real deal. Real sugar, real pumpkin, real half and half and my very own blend for pumpkin pie spice. I don't ever drink my coffee with sugar any more, and only use creamer every now and then, so this was such a treat for me. It is like fall in a cup and has no artificial gross taste like some of those store bought sweetened creamers. I always believe in real ingredients versus the other stuff and this is no exception. And I promise it isn't hard. Promise!
Let's do fall together!
Pumpkin Spiced Creamer
- 1 1/2 cup half and half
- 2 tablespoons pumpkin puree
- 2 tablespoons raw sugar
- 1 teaspoon pumpkin pie spice
- pinch of salt
In a small sauce pan over medium heat, add the half and half, pumpkin, sugar, pumpkin pie spice and salt. Whisk to combine and bring the mixture to a simmer. Continue to whisk to ensure the sugar dissolves and all the ingredients are blended together - about 5 minutes. Remove from the heat and add it to your coffee as desired.
Now this has sugar in it so it is sweetened, but you can add more pending your taste. Add more sugar directly to the coffee as needed. Store the leftovers in an air tight jar for up to a week.
I've made this with whole milk as well and it works just great. I personally like half and half in my coffee, so this was my desired recipe. Try almond milk or even coconut milk if that's your thang!
