Did you know July is National Picnic Month? Well, it is! I have always loved a good picnic - sitting outside with friends, family, and food is pretty amazing I'd say. I really have experienced the next level of picnicking since moving to Colorado. There are just so many options for outdoor eating around here. Whether it is a simple PB&J lunch in the park, City Park Jazz with chicken and ribs, shrimp and corn salad at the Botanic Gardens, or a simple cheese plate on the back patio. You can go as simple or fancy as you like. Just pack it in and move it outside.
I had a big old Costco chicken in my fridge last week and from it, came this salad. I packed this bad boy for a little pool side picnic a few weeks ago. Jaye and I went for a 5 mile hike up in Eldorado Canyon State Park and went to the Eldorado Springs pool after. The cooler was packed, our lounge chairs and big hats in tow we enjoyed this lunch to the fullest. Hike + pool time + good food = a happy day in my book.
Chicken Curried Salad
- 8oz cooked chicken, shredded
- 2 teaspoons curry powder
- 2-3 tablespoons of mayo (or half mayo half yogurt)
- 1 green onion, sliced thinly
- 1/2 green apple chopped coarsely
- salt and pepper to taste
- sliced avocado, more sliced green onion, and salted roasted cashews to top
Place the shredded chicken in a large bowl, add the curry powder, green onion, apple, and mayo. Mix to combine all the ingredients together. You can add more mayo/yogurt for a creamier texture to your liking. Season with salt and pepper. Top with avocado, cashews, and green onion and serve on a bed of green or pita.
