As I mentioned in my last post, 2016 didn't start out all to great for me. I had high hopes when I came back home from my Florida vacation. I was a little tanned. Well rested. And my mind was at ease knowing I had to go back to work in a few days. Almost two weeks off does a body and mind real, real good.
I went back to work on Sunday. All was well, but when I got home I had a little sore throat. Figured it was no big deal, so had a toddy to sooth it and went to bed. All to wake up Monday morning with death cold 2016. Ughhhh. I HATE being sick. It rarely happens to me and when it does, it usually is only a day or two max. This bug lasted (and I'm still coughing at bit) a SOLID seven days. Those of you that know me, know its really hard for me to be laid out. And this thing kicked my ass so hard I had no choice to have couch be my very best friend.
The first few days I didn't have much of an appetite. I would eat oatmeal and soup, drink tea and hot water, and eat some crackers. That's it. By day four I was starting to feel semi-normal and needed some greens in my body. I had no energy to go to the store, so I scoured through the fridge to see what I could blend up. I wanted something cold and soothing for my throat and figured a juice or smoothie would be a great option.
I came up with this green juice and loved it! The spicy ginger burned in a good way and the cucumber cooled everything down. It was the refreshing snack I totally needed and I hope it kick started killing the virus that I feel was trying to take over my life (so dramatic...but that's how I felt). This recipe is going in my bank for when I need to kick start my immune system again!
Spicy Ginger Green Juice
- 1/2 cucumber, peeled
- about 1 inch of fresh ginger
- 1/2 green apple
- 1 cup fresh spinach
- juice from 1/2 lemon
- 1 cup of cold water
Place all the above ingredients into a high powered blender. Blend until smooth. And drink.
