I know its hard to image, but sometimes, I don't have my shit together. Sometimes I get disorganized. I am unprepared. Sometimes life happens. It will be alright. It will come back together. I'll get my mojo back and it. will. be. FINE. Promises.
I have to keep telling myself that any way. I am in the thick of training for my second triathlon and have 5 weeks to go. I feel a little "off" these weeks. I'm pretty tired and mostly sore all the time. And hungry, I am hungry all.the.time. I have loved this round of training and feel like I am kicking some serious ass, but I think will welcome the much needed break coming up. I can't wait to not feel guilty about skipping a Friday night workout and coming home after to eating cashews and a having glass of wine for dinner. I can wake up late on Sunday, have lots of bacon and coffee and stay in my pjs until noon. Oh the possibilities!
Ok - let's be real, I'll enjoy that life for 2 weeks and need some sort of structure again. But I will resist it as long as I can.
Any way, I came up with this lunch a few weeks back because I basically ran out of food in my fridge (because I ate ALL OF IT) and had not idea what to eat. I was starving and wanted protein. I looked to see what I had left over from my weekly food prep and there was basically hard cooked eggs, an avocado, and some frozen pita. I figured, I've put avocado on my toast and topped it with an egg...so maybe I could work with that idea. So I chopped every thing all up, mixed it with a bit of yogurt and a squeeze of lemon, lots of salt and pepper and stuffed that pita. Lunch is served!
Since then, I've made this for lunch several times. It is something so easy I can just throw in my bag for work and head out the door. BAM. There you have it; now on the rotation list. Just like that.
Avocado Egg Salad
- 2 Hard Cooked Eggs
- 1/2 - 1 ripe avocado
- 1 tablespoon of greek yogurt
- Squeeze of 1/2 lemon
- Salt and pepper to taste
- 1 whole wheat pita
- 1 handful of fresh arugula
Coarsely chop the hard cooked eggs. Smash the avocado and add to the egg mix. Add the yogurt and lemon and mix well. Top with salt and pepper to taste. Stuff in a pita with some greens or top on some nicely toasted bread. Eat right away.
