Doesn't watermelon just scream summer to you?
If there is one fruit that feels like a summer anthem, it's this one. Iconic, really. It seems like it is always a staple at BBQ, summer parties, evenings on the patio.
That bright pink, sweet melon just asking for you to bite into it!
My problem is, I always buy a big ass melon, but we have just two people to feed. There is only so much melon you can stuff your face with over the week, then it goes bad. And when food goes bad on my watch I feel like a bad person.
So last week, when my watermelon was on the brink of not being perfect any more, I decided I needed to act - FAST!
And what other thing screams summer at you? Frozen pops!! Look at me, combining the best of both into these fresh treats.
And I'd say these are a whole lot healthy that a big ol' bowl of ice cream. Not that there's any thing wrong with that...I'd love that actually. I just feel less guilty eating a pop every night.
These are one of those fix and forget about it things too - which I'm all about. You can throw everything into a blender in the morning, stick 'em in the freezer and they are ready for you when you get home from work, the beach, or park.
Watermelon Mint Pops
Makes 6 pops
- about 4 cups watermelon
- 1 tablespoons sugar
- 1/4 cup mint leaves, minced
- zest from 1 lemon
- Pinch of salt
Add all of the above to a blender and blend until smooth. Divide into a froze pop mold, place a wooden pop stick in the center of each mold and freeze for 6-8 hours. When ready, place the pops in a bowl of warm water to loosen up the mold. Remove from the mold and enjoy or store in a zip lock for the later consumption.
