I really don't use my slow cooker as much as I would like. When I do dig it out, I put it to good use and make probably 3 meals a week in that thing. But then I tend to clean it, store is away, and don't see it again for a while.
During the last few months, I've pretty much left the crock on the counter all the time. Which sucks because I don't have a ton of counter space, but I did it mostly because I wanted to try and remind myself that it was this lovely gadget that can help make life easier. Also, I was tired and was too lazy to make room to store it away again.
But my trick worked! These oats have been on a bi-weekly rotation in house. Plus, I've made a few soups, short ribs, and even a loaf of bread it that thing.
Because let's face it, life if hard. And making meals can be really hard some weeks. This is my solution to help just a tad.
These oats, you just prep the night before, go to sleep, and BAM. Done and breakfast is ready. Life. Easier.
I add egg whites to mine, but this is optional. You should try it though! You can't taste the eggs and it adds such a good dose of protein. And, they tend to fluff up so nicely. Mmmm...fluffy oats. Sounds so good right?!
The past few weeks have been hectic with my triathlon, then some quality time with friends, so I just didn't get to meal prep or plan. I really paid for it. I seriously ate eggs at least 5 times for meals. Hard boiled in my lunch or scrambled for dinner. It was quick, easy, and I usually had some veggies I could throw on the side. I love eggs! But not that much.
One batch of these oats makes 4 servings. I usually keep old jars around, so I will divide up the oats and stash them in the fridge.
You can eat these oats hot or cold. I love saving old nut butter jars to store oats in! Then I can just toss in some fruit and take that sucker with me to work!

Slow Cooker Protein Steel Cut Oats
Makes 4 Servings
- 1 cup steel cut oats
- 4 cups of water
- pinch of salt
- 1 cup of egg whites
- 4 tsp honey, or desired sweetener
- assorted fruits and toppings of you choice
In your favorite slow cooker, combine the oats, water, and a pinch of salt. Stir and place on low for 8 hrs. Go to bed. Sleep. Wake up. You might find a crust has formed on your oats that almost looks burnt. Don't freak out. Just take a wooden spoon, stir and scrap the cooked pieces into the oat and stir again to combine. Add the egg whites and stir until it is completely mixed in. Turn the crock back on high for another 15-20 minutes. After it sits, all the steam will loosen and soften the crusty ends even more, so it will mix in nicely with the rest of your oats. Stir in the honey and divide up your oats into 4 jars, cool, and store up to a week in the fridge.
You can heat these up when you're ready. Just add about a tablespoon of milk or water, heat in a sauce pan or in the microwave for about 1 minute - 1 minute 30 seconds. Or eat cold straight from your jar. Either way!
There you have it. 1 night's good sleep equals 4 breakfasts ready to go.
