I walked into the grocery store Friday to grab more kale for this salad. I was thirsty too, so I decided to grab a beverage and settled on a ginger kombucha. As I was checking out and walking out of the store, I literally laughed and looked down at my purchase. Who the f am I? Four years ago I had only ate romaine salads and had no clue what the hell kombucha was. Look am me now. California has turned me into something...
But, its not like I'm complaining. I love my life and my choices. I get made fun of a bit by my Florida people. They just don't know, ya know. I can already hear my dad saying...what the hell are you eating now.
Oh well, kale and kombucha it is for me!
Some might call kale "hip" or "trendy." I say its classy. I'm making it classy at least. And it is here (in my life at least) to stay. No trend. No fad. Just good.
I've been making this salad a lot lately. Especially on Mondays for some reason. I'm usually tired from my weekend workouts, and this is so incredibly easy to throw together, so I think that's why.
All I really need to do is throw some kale in a bowl and give it a give massage with some avocado oil (you can use extra virgin too if you have that on hand), then I grab a can of tuna, a can of white beans, an apple.
By the way have you tried avocado oil? Holy goodness. It's all the butteryness of avocados in a lovely liquid form. Pretty damn delicious if you ask me. I found this at Target not too long ago, but I've seen it at Safeway and Whole Foods too. I've actually made a batch of mayo with it too. The mayo turned a beautiful avocado green, which made my hubs think it went bad, but it tasted amazing on egg sandwiches and BLTs!
Any way, back to this salad. I'm a big fan of simple and is so easy, it can be assembled at work.
Boom. Done. Lunch is ready.
And - it is satisfying. Pack with protein and good carbies, you won't feel too sluggish after scarfing this down.
Kale, Tuna, White Bean, and Apple Salad
- 1-2 cups of lacinato kale (dino kale)
- 1 can of albacore tuna, drained
- 1/2 cup of white beans, drained and rinsed
- 1/3 cup of chopped granny smith apple (about 1/3 of an apple)
- 2 tsp avocado oil
- 1 tsp red wine vinegar
- salt and pepper to salt
Wash and dry your kale, then break it into bite size pieces. Place the kale in a big salad bowl and add the avocado oil and a pinch of salt. Massage the kale with your hands until the it is coated and begins to tenderize/soften. Add the red wine vinegar and combine again. You can stop here if you want to tote the rest off to the office, but if you want to eat it right away, top the kale with the tuna, white beans, and chopped apple. Add a good pinch of salt and some fresh pepper to taste and enjoy! Adding some sliced avocado makes this even better, but that's optional.
