We are in it guys. October is in full swing. There's no denying it now. How's it going so far? Are you enjoying some fall weather? Preparing your pumpkins? C and try to watch a scary movie each day this month. It is a challenge, but a fun tradition. We rotate who picks each day and this year we are trying to pick a few new movies each round. Have you seen The Babadook on Netflix? Really, really scary.
So listen, I'm really good at roasting and eating ALL my veggies throughout the week. Every now and then, we need to treat ourselves. We need to indulge. We need a movie time snack!
And I'm not going to lie, I am a total fan of candy corn. I love the sweet vanilla sugary taste and the way it slowly disintegrates in your mouth. It is pure sugar damn it. Can you see where I'm going here?
So I made this Candy Corn Bark last year and it was...well...so bad of you, but so damn good.
Sweet + Salty = Winning!
But let's face it, its Halloween, so treat yo self (in moderation of course).
Tomorrow we can do burpees together and eat broccoli. Deal?
Candy Corn Bark
Inspired by my BFF, Alyson's Christmas Crack
1 sleeve of saltine crackers
6oz of dark chocolate chips
1 cup of crushed pretzels
3/4 cup of candy corn
3oz of white chocolate chips
1 tsp coconut oil
Line a rimmed baking sheet with parchment paper. Lay out the saltines so they cover the bottom of the baking sheet (doesn't have to be perfect looking, just line them up). Place the dark chocolate in a microwave safe bowl and gradually melt, cooking on high, using 30 second intervals. After each 30 seconds, stir the chocolate to ensure it melts as evenly as possible. When it is all melted, pour it over the crackers and using a rubber spatula, spread all over. Sprinkle of the crushed pretzels and candy corn on top. Next, place the white chocolate in a bowl with the coconut oil and melt the same way in the microwave (30 seconds, stir, repeat until melted). Then drizzle the white chocolate on top with a fork or spoon. Let it cool and harden before digging in. I actually threw mine in the fridge for 20 minutes to speed up the process.
Once it is completely cooled and hardened, break it up into pieces!
