I've been a bit under the weather this weekend, so while I was in between napping, drinking a toddy, and watching Boardwalk Empire, I decided to get a head start on next week's menu. I've definitely got a chicken thing going on if you haven't noticed and I'm relaying on leftovers a few times to get me to Friday. I'm gearing up for another training season that starts Saturday, so I am practicing on making meals last a few days or into lunches for the week. Let's see how it goes!
I'll be prepping tomorrow morning before the Super Bowl fun begins. I made my Roasted Eggplant Dip, I plan to bake some chicken wings and toss in hot sauce and serve a salad on the side for the game. The partay is at my house, so I'll be prepping the rest of the week's food along with game day food. Game. On.
Here's my list:
- Green and prep green beans
- Chop red peppers and onions for curry
- Roast Cauliflower
- Hard cook eggs
- Roast a couple sweet potatoes for snacks
Not a huge list this week - which is good for my busy morning ahead.
