It’s crazy town around here right now. After I got home from Florida, I got a call from my property management company saying the owners wanted to move into our house.
Meaning we had to get out!
Talk about unexpected.
Ugh...the life of a renter.
Of course, that same day I got the call we had to move out; I went on the hunt for a new place immediately.
After many hours on craigslist, hotpads, and padmapper, I found a place last week that is right up the road from where we live now. Oh, and Friday they told me we could move in on the 28th! In a week - wait at this point its like 3 days actually! AHHHhhhh - mini freak out.
When change happens, it happens FAST!
So, needless to say, I’ve been a packing fool.
Our house is a hot mess. It may not look that bad, but it’s bad for me! I can’t find anything I am actually looking for, and look at poor bailey, she has no clue what's happening.
So, in an effort in minimize what we have to move, I’ve stopped grocery shopping and I’ve been trying to use up all the stuff in the pantry and fridge.
This morning I was craving something refreshing and filling, but something that wouldn't weigh me down. So I grabbed a bunch of stuff that was laying around, just waiting to be used up, and came up with this smoothie.
It’s full of stuff that sticks to your bones to help keep you full throughout the morning. You start out with a nice sweet, ripe banana. If you have a frozen one, even better because you can omit the ice listed in the recipe. I added oats to make it a little hearty, but not over the top, the chia seeds are full of omegas and help to thicken everything up, but if you don’t have any don’t worry – you’re not losing any flavor. I used a bit of non-fat plain greek yogurt for some extra protein and creaminess, then threw in some vanilla extract and cinnamon to help spice it up. Then I blended it all with peanut butter and plain almond milk.
Because everything is better with peanut butter.

Any way, its yummy! This smoothie will be going into the weekly breakfast rotation.
Peanut Butter Banana Oat Smoothie
1 banana (frozen or not)
¾ cup of almond milk
2 tablespoons rolled old fashioned oats
2 tablespoons plain greek yogurt
1 tablespoon peanut butter
½ tablespoon chia seeds
¼ teaspoon vanilla extract
¼ teaspoon cinnamon
¼ cup of crushed ice (if you aren't using a frozen banana)
Place all the ingredients into a blender and process until combined. Serve immediately in whatever container you haven't packed yet (in my case an empty jar) and enjoy.
